Suribachi and Surikogi

(Japanese mortar and pestle)



Suribachi is used to crush ingredients such as sesame seeds,     peanuts, spices and also  for grating sticky yam (yamaimo) or tofu.  The bowl is also used for mixing dressings with ingredients, and for serving.  One bowl for 3 uses!


More about Suribachi….


Introduced to Japan in around 11th century, it was originally used for medicine preparation.  Later, used for grinding beans for making miso paste, and eventually for food preparation in general.  Inside the bowl is unglazed with a rough pattern called kushinome (ridged pattern) to facilitate grinding.


Our Suibachi bowls are made in Tokoname city (Aichi) and Mino(Gifu).


Many of favourite Japanese dishes are made with a use of suribachi; Spinach Gomaae, Shiraae (tofu with sesami paste), Ebishinjo (shrimp ball), Cucumber gomaae (crush cucumber lightly and mix with dressings), and many more!
