Sake was traditionally served warm until 40 years ago.
As brewing technology improved along with the availability of new strains of rice and yeast, highly fragrant premium sake became available.
Sake will be different at even slightly different temperature.
Different ways of drinking sake are: Chilled, called"Reishu", Room temperature, called "Hiya" and Warmed, called "Atsukan"
In general, sake types such as namazake or the cloudy nigorizake and delicate premium sakes are the best to enjoy as hiya or reishu.
Enjoy good sake chilled like white wine. It is refreshing and tasty!
